Apricot Mini Cheese Balls

What You Need:

1/4C shredded low fat cheddar cheese (at room temperature)
1/2C light cream cheese
1 1/2C dried apricots, diced
1/2C fresh parsley, chopped

How to Make It:

Place the cheddar cheese and cream cheese together in a large mixing bowl.
Beat mixture together with an electric mixer on low speed 2 minutes or until completely combined.
Use a rubber spatula and fold in the dried apricot pieces until combined.
Remove a teaspoon full of the cheese mixture and roll into a ball.
Roll the cheese ball in the parsley.
Place on a piece of wax paper.
Continue until all of the cheese mixture is used.

16 Servings

Serve this with crackers or even fresh chopped vegetables.  These will stay fresh in an air tight container for up to 2 weeks in the refrigerator.
