Baked Carrot Fries

What You Need:

12 carrots
2 TBSP extra virgin olive oil
Sea salt to taste

How to Make It:

Wash and trim the carrots.
Cut each carrot in half or thirds depending on the size of the carrot.
Place the cut carrots in a mixing bowl.
Add the olive oil and toss to cover the carrots well.
Preheat oven to 375 degrees.
Place the carrots in a single layer on a cookie sheet.
Cover the carrots with as much sea salt as you like.
Bake 25 minutes or until carrots are a light brown in color.

These carrots make a great after school snack.  You can serve them with a dip or if you want something just a little sweeter try sprinkling them with a little cinnamon sugar instead of the sea salt before baking.
