What You Need:
1 C cream cheese, softened
12 fresh apricots
1/4C pistachios, chopped fine
How to Make It:
Cut the apricots in half and remove the pit.
Place the apricots on a serving plate.
Fill each apricot half with some cream cheese.
Sprinkle the chopped pistachios over the top.
12 Servings
Flavored cream cheese makes these stuffed apricots taste even better. If you don’t like pistachios or are serving to children try topping them with a few chopped maraschino cherries.
