Oatmeal Fruit Bars

Cinnamon Oatmeal Fruit Bars

What You Need:

3/4 C brown sugar, firmly packed
1/2 C white sugar
1 (8 oz.) container low fat vanilla yogurt
2 egg whites, beaten slightly
2 TBSP canola oil
2 TBSP milk
2 tsp. vanilla extract
1 1/2  C all purpose flour
1 tsp. baking soda
1 tsp. cinnamon
3 C quick oats, uncooked
1 C dried mixed fruit, chopped

How to Make It:

Place the brown sugar and white sugar together in a large mixing bowl.
Toss slightly to combine.
Add the yogurt and egg whites.
Pour in the oil, milk and vanilla.
Stir well with a rubber spatula to combine.
In a separate bowl combine the flour, soda and cinnamon.
Toss well to incorporate the ingredients.
Place the sugar mixture into the flour mixture and stir well with a rubber spatula.
Add the oats and continue stirring.
Add the dried fruit and stir until completely combined.
Set the oven to 350 degrees and allow to heat.
Spread the mixture evenly in a large ungreased baking pan.
Once the oven is heated bake the bars for 25 minutes or until a light brown.
Allow to cool to room temperature before cutting into equal size bars.

Dried fruits are full of nutrients and work well in many recipes.   These bars make perfect snacks for anyone and are especially great for a morning pick me up.
